Spicy Chicken Pita Burgers with Mint Yoghurt
Ingredients:
- Chicken Mince - 500g
- Chillies - chopped to taste (I used two bullets and two long red ones)
- Garlic - 3 cloves
- Red Onion - 1
- Coriander - handfull
- Cumin - seeds, 1bs
- Salt flakes - to taste
- Cucumber - Lebanse, 1
- Greek yoghurt - 1 cup
- Mint - fresh leaves, handfull
- Lettuce -
- Pita Bread - 4
Instructions:
To make the Chicken burger, toast the cumin seeds in a dry pan until they start to darken, transfer to a mortar and pestle and crush. In a food processor add the cumin coriander, chillies, garlic and onion, process until smooth. Transfer to a mixing bowl and combine with the chicken mince. Mix well with hands to form four flat patties and fry in a few drops of olive oil in a cast-iron pan. Meanwhile mix yogurt, mint and a pinch of salt. Warm the pita bread slightly over the naked flame of the gas hob and slice open, place the lettuce at the bottom, then place the burger and top it up with some yogurt and a few slices of the cucumber.
