This recipe also works well with peaches too. I have also been using coconut ice-cream made from coconut milk [Coyo], which is completely dairy free, this this desert is perfect for folk with lactose intolerance. If this is not an issue, any ice-cream will do.
Add the grapeseed oil to a griddle pan and preheat to a medium-hot temperature. Drizzle the cut sides of the figs with honey, place the figs on the hot griddle cut-side-up and cook for 1-2 minutes, flip them over and cook for another 1-2 minutes until slightly caramelised.
Serve with a generous scoop of ice-cream.
