Floodwatch day three. On day one, the supermarkets sold out of every kind of bread (wraps, rolls, fruit breads… everything). Day two boredom set in, and I baked a couple loaves of bread. Day three Bruschetta for breakfast and if I get bored I may bake a few more loaves later in the day and deliver them to friends.
- Basic White Bread
- 2 cloves Garlic
- 2 Vine Ripened Tomatoes, as ripe as possible
- 1 small handfull Basil
- 1 splosh Olive oil
1. Slice the bread, and lightly toast under a grill. Rub each slice with the garlic clove to coat, and continue toasting until crispy. Turn and toast the other side.
2. Roughly chop the tomato and basil, combine with olive oil.
3. Top the toast (garlic side up) with tomato and basil mixture, and a good drizzle of olive oil. Season with pepper.
