Sweet, salty and spicy sausages, moulded around a lemongrass skewer and grilled. These are simply delicious and easy to make. We serve these as a filling for DIY spring rolls.
Ingredients:
- 300 grams minced pork
- 4 stalks spring onions
- 2 cloves garlic
- 1 teaspoon pepper, freshly ground
- ½ teaspoon salt
- 3 tablespoons palm sugar, grated
- 1 tablespoon fish sauce
- 2 fresh red chilies, finely chopped
- 6 stalks lemongrass
Directions:
1. Crush the garlic and chili with a mortar and pestle. In a large mixing bowl combine this with fish sauce, sugar, salt & pepper. Mix well until the sugar dissolves. Now add pork to the seasoning combining all ingredients.

2. Knead the paste & pound handfuls of it in the bowl until the paste reaches an elastic consistency.

3. Form a sausage shape from the paste and form it around 2/3 of a lemongrass skewar. Repeat this process with all the paste.

4. Bring a grill or barbecue to medium heat and cook for 8 minutes turning the chopstick every 2 minutes.

5. Serve as a part of handmade vietnamese spring rolls.
